The big news for 2025 is Casa Marcial in Arriondas, Asturias, elevated to three Michelin stars. Led by Nacho and Esther Manzano with the support of Esther's son Jesús, the restaurant celebrates Asturias' landscapes and flavours through three tasting menus. 32 new one-star restaurants across Spain
The 2025 Guide adds 32 new one-star restaurants across Spain. In Barcelona, highlights include Fishølogy, MAE Barcelona, Prodigi and Teatro Kitchen & Bar. Madrid sees new stars for Chispa Bistró, Gofio, Pabú, Sen Omakase and VelascoAbellà. In the Canary Islands, Donaire and Il Bocconcino in Adeje, Kamezí in Playa Blanca, and Muxgo in Las Palmas all earned recognition. Andalusia adds Mesón Sabor Andaluz in Alcalá del Valle and Blossom in Málaga. In 2025, chef Benito Gómez, who already holds two stars for Bardal and Tragatá in Ronda, announced the opening of Dalmar at the Fairmont La Hacienda Costa del Sol in La Alcaidesa, Cádiz. Dalmar will showcase seafood from Málaga and Cádiz alongside retinto beef. Meanwhile, Gómez is renovating Bardal and Tragatá to raise their standards further.
Málaga remains a hotspot with Michelin-starred restaurants like Skina, Messina and Nintai, and the newly awarded Blossom, reinforcing its reputation for creative, product-driven cuisine.
Michelin Green Stars and Bib Gourmands
This year nine new restaurants received the Green Star, recognising sustainable gastronomy and commitment to local producers. Spain now has 57 Green Star restaurants.
